Discover the joy of soy: April is Soyfoods Month

MARION, Ark. - It's a good thing that soybeans are so abundant in this state, because they offer tremendous health benefits! Arkansas has traditionally been one of the top ten national soybean producers.

As we age, it becomes increasingly important to supplement our diets with foods, such as soy products, that have been scientifically proven to promote good health.

"Soy is a high-protein food product that helps to build, maintain and repair different muscles and other tissues. In addition, soy is low in calories and saturated fat and has zero cholesterol," says VeEtta Simmons, Crittenden County extension staff chair with the University of Arkansas Division of Agriculture.

About 15 years ago, the scientific community began actively investigating the role of soy in relation to health. Recent scientific studies have indicated that soy foods show promise for boosting mental ability and protecting against bone loss and some types of cancer, according to Simmons.

Soy products can help supplement a healthy diet in a variety of ways. Simmons suggests the following tips to discover the "joy of soy:"

  • Add soy milk to your morning cereal
  • Fortify a glass of orange juice with soy protein powder
  • Make soy yogurt and fresh fruit parfaits
  • Snack on soy nuts
  • Enjoy a soy milk or soy yogurt smoothie
  • Use soy milk in cake and muffin recipes
  • Treat your guests to guilt-free nachos with smoked soy cheese
  • Add soy burgers and soy dogs to your next cookout menu
